2 pounds red potatoes, cut into 1/2 inch cubes
1 cup mayonnaise
1/3 cup diced celery
2 tablespoons crumbled cooked bacon or bacon bits
2 tablespoons chopped fresh chives
1 teaspoon deli mustard
1/2 teaspoon apple cider vinegar
1/4 teaspoon sugar
Cooking time: 8 minutes

In a 4 quart saucepan, cover potatoes with water.
Bring to a boil over high heat.
Reduce heat to low and simmer, uncovered 8 minutes or until potatoes are tender; drain and cool slightly.
In a large bowl, combine remaining ingredients.
Add potatoes and toss to coat.
Season, if desired, with salt and pepper.
Serve chilled or at room temperature
