Cake Ingredients:
2 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/3 cup margarine
1 egg, slightly beaten
3/4 cup moist mincemeat
1/2 cup milk
vanilla extract
chopped nuts, dates or fruitcake fruits (optional)

Confectioners Sugar Glaze Ingredients:
1 1/4 cups confectioners' sugar
3 tablespoons milk
1/2 teaspoon clear vanilla extract
Cook time: 35 minutes
Prep time: 1/2 hour

Preheat oven to 375 degrees.
Mix together flour, sugar and baking powder.
Cut margarine in flour mixture until mixture resembles coarse corn meal.
In a separate bowl, mix egg, mincemeat, milk and vanilla together.
Add liquid to dry ingredients and mix just enough until all of the flour is dampened.
Add chopped nuts or dates or fruitcake fruits, if desired.
Bake in well-greased tube pan for 30-35 minutes.
*Drizzle with confectioners sugar glaze while warm.

Stir milk into sugar. Add vanilla.
May be thickened with confectioners' sugar or thinned with milk.
