Yield: 6 serving

1 cup brown sugar, packed
2 cups water
2 tablespoons margarine
3/4 cup brown sugar, packed
1/3 cup water
1 1/4 cup Bisquick baking mix
1 cup raisins or cut up dates
1/2 cup chopped nuts
1 teaspoon vanilla
Ginger Topping (below)
Cooking time: 45 minutes

Preheat oven to 350 degrees.
In a saucepan, heat 1 cup brown sugar, 2 cups water and the margarine to boiling, stirring occasionally; boil 5 minutes.
Pour into ungreased 8 X 8 X 2 inch baking dish.
Mix remaining ingredients except topping thoroughly.
Spoon batter onto mixture in pan. (Batter will sink into liquid and pread out as it bakes.)
Bake 40-45 minutes.
Serve warm with Ginger Topping.
Ginger Topping:
In a chilled bowl, beat 1/2 cup chilled whipping cream and 2 tablespoons sugar until stiff; fold in 1/4 teaspoon ginger.
Or fold 1/4 teaspoon ginger into 1 cup frozen whipped topping (thawed).
