2 cups macaroni, uncooked
2 cups ham, cubed
3 Tablespoons unsalted butter
2 Tablespoons unbleached all-purpose flour
1 teaspoons dry mustard
2 cups milk
3/4 cheddar cheese, shredded
1/2 cup monterey jack cheese, shredded
salt and pepper
In a large pot, Cook the pasta according to package direction. Drain and set aside.
Preheat oven to a low broil. Grease an 8 cup casserole dish
In a large pot melt butter over medium heat. Mix in the flour, and mustard, and whisk for 1 minute or until smooth. Pour milk in slowly, whisking constantly until all lumps are stirred out.
Bring to a boil and reduce heat to a simmer. Continue whisking for 3 minutes or until the sauce is thick.
Remove from the heat and stir in shredded cheddar cheese until melted. Gently fold in noodles.
Pour noodle mixture into a casserole dish top with salt and pepper and cover with remaining cheese.
Broil in oven 5 minutes or until topping is golden
