Yield: 18 4 inch pancakes

2 cups Bisquick baking mix
1/2 teaspoon cinnamon
1 egg
1 1/3 cups milk
3/4 cup grated apple (2 medium)
Cider Sauce (below)

Beat Bisquick, cinnamon, egg and milk with mixer until smooth.
Stir in apple.

Grease griddle, if necessary.

Pour batter by 1/4 cup measuring cupfuls onto hot griddle.

Bake until bubbles appear.
Turn; bake other side until golden brown.

Serve with warm Cider Sauce; if you wish, top with dairy sour cream.

Cider Sauce:
1 cup sugar
2 tablespoons cornstarch
1/4 each cinnamon and nutmeg or 1/2 teaspoon pumpkin pie spice
2 cups apple cider
2 tablespoons lemon juice
1/4 cup margarine

In a saucepan, mix sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice.

Cook, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.

Remove from the heat;; stir in margarine.
