4 medium eggs
2 cups sugar
1 1/2 cups pumpkin
1 cup (2 sticks) butter, softened
3 1/2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon confectioners' sugar
1/2 teaspoon cloves
1 1/2 cups chocolate chips
1 1/2 cups walnuts, chopped
Preheat oven to 375 degrees. Grease two 9 X 5 inch loaf pans.
In a large bowl, cream eggs, sugar, pumpkin and butter. In another bowl, sift together
flour, baking soda, cinnamon, nutmeg, salt, ginger and cloves. Add to egg mixture
and stir until combined. Stir in chocolate chips and walnuts. Pour mixture into two
loaf pans.
Bake 60 minutes in 375 degree oven, or until a toothpick inserted in the middle comes
out clean. Remove from oven and cool slightly.
