Yield: 1 8 inch square or 10 muffins

1/3 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups white cornmeal
1 egg, beaten
1 cup sour cream
2 tablespoons oil or melted shortening
Cooking time: 25 minutes

Preheat oven to 400 degrees. Preheat an 8 inch square pan or muffin pan in oven, then grease generously.
Sift together into mixing bowl the flour, sugar, baking powder, baking soda and salt. Stir in cormeal. Combine egg,sour cream and oil. Add to dry ingredients and stil only until dry ingredients are moistened. Turn batter into pand and bake in oven 25 minutes.
