Ingredients

Yield: 1 bundt cake

3/4 cup (1 1/2 sticks) margarine
1/4 cup creamy peanut butter
4 eggs
1/2 cup buttermilk
2 cups sugar
3 teaspoons baking powder
3 cups flour
1 teaspoon vanilla
1/2 cup water
Peanut Butter Toppin (below)

Cooking Instructions

Cooking time: 65 minutes

Preheat oven to 350 degrees.

Grease and flour bundt or tube pan.

Let margarine, peanut butter, eggs and buttermilk warm to room temperature for easy mixing. (Margarine should be very soft).

Combine room temperature ingredients with sugar, baking powder, flour, vanilla and water in a large bowl. Beat at slow speed with mixer for 30 seconds, then at medium speed for 2 minutes, scraping sides of bowl. Pour into prepared pan.

Bake in oven for 45 minutes, then lower heat to 325 degrees and bake 20 minutes longer or until top springs back when lightly pressed with fingertip.

Cool on wire rack 10 minutes.
Turn out of pan; cool completely before frosting.

*Peanut Butter Topping:
Combine 1/4 cup creamy peanut butter, 1 cup confectioners sugar and 4-5 tablespoons buttermilk in a small bowl until smooth.

Spoon over cake.
