Ingredients

1 1/4 cups sugar
3/4 cup oil
3 eggs
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons cinnamon
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups shredded carrots
1/3 cup finely chopped pecans

Cooking Instructions

Cooking time: 26 minutes

Preheat oven to 350 degrees. Grease 11 X 7 inch pan.

In a large mixing bowl, combine sugar, oil, eggs and vanilla; beat with an electric mixer at medium speed for 1 minute. Combine flour, cinnamon, baking powder, baking soda and salt; add to sugar mixture. Beat on low speed for 1 minute. Stir in carrots and pecans. Spread mixture evenly in a greased 11x7-inch baking dish. Place dish on black metal tray.

Cook for 24 to 26 minutes at 350 degrees or until toothpick inserted into center comes out clean. Cool on wire rack.
