3 eggs
1 cup oil
1 1/2 cups sugar
2 teaspoons vanilla
2 1/4 cups zucchini, grated and well drained
1 cup raisins
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon salt
1 1/4 cup walnuts, chopped
Cooking time: 30 minutes

Preheat oven to 375 degrees.
Grease 2 loaf pans well.
Beat eggs lightly in a large bowl.
Stir in oil, sugar, vanilla and zucchini.
Sift together and stir in dry ingredients; then stir in raisins and nuts.
Bake in 2 well-greased loaf pans for 1 hour or when tester comes out clean.
