1 2/3 cups flour
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine
1 cup sugar
2 eggs
1 tablespoon grated lemon peel (optional)
1 cup canned pumpkin
1 cup walnuts, chopped
1 cup raisins
Cooking time: 25 minutes

Preheat oven to 350 degrees.
Grease 12 cup muffin pan; set aside.
In a large bowl , combine flour, pumpkin pie spice, baking soda, baking powder and salt; set aside.
In a large bowl with a mixer, beat margarine and sugaron medium-high speed until light and fluffy, about 5 minutes.
Beat in eggs and lemon peel, scraping sides occasionally.
Beat in pumpkin.
Gradually beat in flour mixture until blended. Stir in walnuts and raisins.
Evenly spoon batter into greased pan
Bake 25 minutes or until toothpick inserted in centers comes out clean.
On wiire rack, cool 10 minutes; remove from pan and cool completely.
