Yield: 1 loaf

2 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup (1 stick) margarine
1 cup sugar
3 eggs
3 medium ripe bananas, peeled and mashed (1 cup)
1/4 cup wheat germ
1/2 cup walnuts, finely chopped
1/2 cup raisins, chopped
Cooking time: 1 hour 20 minutes

Preheat oven to 325 degrees.
Grease a 9 X 5 X 3 inch loaf pan.
Sift flour, baking powder, salt and baking soda onto wax paper.
Beat margarine , sugar and eggs in a large bowl until light and fluffy; stir in bananas.
Stir in flour mixture; fold in wheat germ, walnuts and raisins.
Pour into prepared pan.
Bake for 80 minutes, or until a wooden pick inserted near the center come out clean.
Cool in pan on a wire rack 10 minutes.
Loosen around edges with knife; turn out onto rack.
Let cool completely.
Wrap in aluminum foil and store overnight for easier slicing.
