Applesauce Cheddar Muffins Date Added: 20 Jul 2013

Ingredients

Yield: 12 muffins

2 cups baking powder biscuit mix
1/4 cup sugar
1 teaspoon cinnamon
1 egg, well beaten
1/2 cup unsweetened applesauce
1/4 cup milk
2 tablespoons oil
1 cup shredded cheddar cheese
1 tablespoon margarine, melted
2 tablespoons sugar

Cooking Instructions

Cooking time: 20 minutes

Preheat oven to 400 degrees.

Coat muffin pans with a non-stick vegetable spray.

Combine biscuit mix, 1/4 cup sugar and cinnamon.
In a separate bowl, combine egg, applesauce, milk, oil and cheese.
Add to dry ingredients and mix lightly.
Fill each cup two-thirds full.

Bake 20 minutes.
Remove muffins from pan and brush tops lightly with melted margargine, roll in 2 tablespoons sugar.
