4 large eggs
1 cup sugar
1 cup brown sugar
2 sticks (16 tablespoons) butter, melted
1 1/4 cup cocoa powder, sifted
2 teaspoons vanilla
1/2 cup flour
pinch of Kosher salt
3- 2.5 ounce packages of Rolo minis
Preheat oven to 300 degrees. Grease a 8×8 baking dish.
In a stand mixer using paddle attachment beat the eggs on medium speed until they are light yellow and fluffy.
Add sugars to combine.
Turn down to medium-low and add all the other ingredients besides the Rolos.
Pour brownie batter into prepared pan.
Sprinkle Rolos on top and gently press them into the batter.
Bake for 45-50 minutes. Or until a knife stuck in the middle comes out clean.
Cool completely before serving
