Yield: 4 servings

2 whole chicken breasts, boned and skinned, cut in halves
3 tablespoons fine dry bread crumbs
3 tablespoons grated Parmesan cheese
1/4 teaspoon salt
dash white pepper
3 tablespoons flour
1 egg, slightly beaten
3 tablespoons each of margarine and vegetable oil
1 lemon, cut in quarters
Cooking time: 30 minutes

Combine and mix well first 4 ingredients.
Dip chicken breasts first in flour, then in egg and then in the cheese-bread mixture.
Heat margarine and oil in skillet until hot.
Add chicken and brown over medium heat about 5 minutes on each side, or until crisp, golden brown and done. Garnish each piece with a lemon quarter.
