Pumpkin Cake with Icing: Date Added: 22 Jul 2013 Ingredients:



2 cups sugar
4 eggs
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 cups pumpkin (1 pound can- do not get pumpkin pie filling)

Cooking Instructions:

Cooking time: 60 minutes

Preheat oven to 350 degrees.

Grease 10 inch tube pan.

Mix sugar and eggs, pour in oil and mix at medium speed on mixer until there is no visible trace of oil, at least 3 minutes.

Add flour and spices, then add pumpkin and milk at slow speed until the batter is well blended.

Pour into prepared pan and bake 1 hour.

Icing:
Blend 1 8 ounce package of cream cheese amd 1 stick softened margarine at slow speed on mixer.
Add 2 teaspoons vanilla extract and 1 pound confectioners sugar and blend until smooth.
