Yield: 2 loaves

1/2 cup mashed banana
1 package yellow cake mix
1 package (4 servings) banana or vanilla pudding mix
4 eggs
1 cup water
1/4 cup oil
1/2 cup finely chopped nuts
Cooking time: 55 minutes

Preheat oven to 350 degrees.
Grease and flour 2 8 X 4 inch loaf pans.
Combine all ingredients in a large mixer bowl.
Blend, then beat at medium speed of mix for 4 minutes.
Pour into loaf pans.
Bake for 50-55 minutes or until tester comes out clean and cake begin to leave sides of the pans. Do not underbake.
Cool in pans 15 minutes.
Remove from the pans and finish cooling on a wire rack.
