Yield: 2 loaves

3 eggs, beaten
1 cup oil
2 cups sugar
3 teaspoons vanilla
1 cantaloupe, cut thin 2 inch chunks and pulse so bits of fruit remain ( about 2 cups of puree)
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon ginger
1 cup walnuts, chopped
Cooking time: 60 minutes

Preheat oven to 325 degrees.
Grease and flour 2 9 X 5 loaf pans.
Mix eggs, oil, sugar and vanilla.
Add pureed cantaloupe to the mixture.
Sift dry ingredients.
Add to liquid.
Pour into loaf pans.
Bake for 1 hour or until done.
Check after baking 50 minutes.
