Yield: 18 muffins

2 cups flour
1 1/4 cups sugar
1 tablespoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
3 large eggs
1 cup margarine, melted
1 cup shredded carrots
1/2 cup raisins
1/2 cup chopped pecans or walnuts
1/2 cup flaked coconut
1 medium apple, peeled and grated
Preheat oven to 400 degrees.
Cooking time: 20 minutes

Grease 18 muffin cups; set aside.
In a large bowl, combine flour, sugar, baking powder, cinnamon , salt and baking soda.
With wooden spoon, stir in eggs, margarine and vanilla just until combined.
Stir in carrots, raisins, pecans, coconut and apple.
Evenly spoon batter into prepared pans.
Bake 20 minutes or until toothpick inserted in centers comes out clean.
On wire rack, cool 10 minutes; remove rfom pans and cool completely.
