Almond Pudding Loaf - A MomMom Favorite! Date Added: 24 Jun 2013

Ingredients

Bread Ingredients:

1 1/3 cup toasted almonds, finely chopped
2 1/2 cups Bisquick
1/4 cup sugar
1 package (4 servings) vanilla instant pudding
2/3 cup milk
1/4 cup vegetable oil
4 eggs

Creamy Glaze Ingredients:

1 cup confectioners sugar
1 teaspoon rum extract or almond extract or vanilla
1-2 tablespoons of milk

Cooking Instructions

Making The Loaf:

Preheat oven to 350 degrees.

Generously grease 9 X 5 X 3 inch loaf pan.

Sprinkle 1/3 cup of almonds over the botton and sides of pan, pressing if necessary.

Beat remaining almonds and other ingredients except the glaze in a large bowl on low speed of the mixer, scraping the bowl constantly, 30 seconds.

Beat on medium speed scraping bowl occasionally for 3 minutes.
Pour into pan.
Bake until wooden pick inserted into center comes out clean, 50 - 55 minutes.
Immediately remove from pan.
Cool completely on wire rack.
Make creamy glaze and spread over loaf.
Garnish as desired.

Creamy Glaze:

Beat 1 cup confectioners sugar, 1 teaspoon rum extract or almond extract or vanilla and 1-2 tablespoons of milk until smooth and of desired consistency.
