2 cups boiling water
1 cup brown sugar, packed
6 tablespoons margarine, softened, divided
2 teaspoons vanilla
1/2 cup sugar
1/2 cup milk
1/8 teaspoon salt
1 cup flour
1 teaspoon baking powder
1/2 cups raisins
1/2 cup chopped pecans or walnuts
whipped cream
Preheat oven to 350 degrees.
Combine boiling water, brown sugar, 2 tablespoons margarine and 1 teaspoon vanilla in 10 inch oven proof skillet or similar size shallow casserole dish until smooth.
Beat sugar and remaining 4 tablespoons margarine in medium bowl until creamy.
Beat in milk, remaining 1 teaspoon vanilla and salt.
Add combined flour and baking powder; beat until smooth.
Fold in raisins and nuts.
Spoon mixture by heaping tablespoons evenly onto liquid in skillet; do not stir or spread.
Bake 25 minutes or until set and liquid is bubbly.
Serve warm with whipped cream. Refrigerate leftovers.
