16 tablespoons cold unsalted butter (2 sticks), cut into small pieces
10 tablespoons ice water
Filling:

6 cups thinly sliced, peeled apples 6 Medium apples
1/2 Cup sugar
1/2 Cup brown sugar
2 T. all-purpose flour
3/4 tsp. ground cinnamon
1/4 tsp. salt
1/8 tsp ground nutmeg
