2 cup Yellow corn meal
1 cup All-purpose flour
1 teaspoon Baking powder
1/2 teaspoon Baking soda
3/4 teaspoon Kosher salt
1/4 teaspoon Paprika
1/4 teaspoon Black pepper
1 Pinch Cayenne pepper
1 Large onion (finely diced)
2 Eggs (slightly beaten)
1 cup buttermilk
2 Cloves Garlic (minced)
2 tablespoon bacon fat (melted)
6 cup Vegetable oil for frying
Combine dry ingredients, then add diced onion Combine eggs, buttermilk, garlic and melted bacon fat.
Stir wet ingredients into dry just until combined. Do not overmix.
Fry rounded teaspoonfuls in oil preheated to 350 degrees F. for 3-4 mins until golden brown.
