1 egg
1/3 cup milk
2 tablespoons maple syrup
1/2 cup yellow cornmeal
3/4 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons butter
butter
maple syrup or honey
Cooking time: 15 minutes

Preheat oven to 425 degrees. Grease and preheat 12 muffin cups.
Beat egg. Add milk and syrup and beat again. Mix cornmeal, flour, baking powder and salt. Gradually stir in first
mixture. Add butter. Spoon into tiny greased, preheated muffin cups filling only 3/4 full.
Bake at 425 degrees 15 minutes or until muffins are crisp and brown outside, tender and light inside. Serve hot with
butter and maple syrup or honey.
