1/2 cup butter,softened
1 cup sugar
2 eggs
1 1/2 cups flour,sifted
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
juice and grated rind of 1 lemon

Lemon Glaze (optional)

Cooking time: 1 hour 10 minutes

Preheat oven to 300 degrees. Grease 9 X 5 X 3 inch loaf pan.

Cream butter and sugar. Beat in eggs. Sift dry ingredients together and add to batter alternately with milk. Mix
well. Stir in lemon juice and rind.

Bake in greased loaf pan at 300 degrees 1 hour and 10 minutes. Remove to rack.

If desired, pierce loaf top with cake tester in a number of place and pour over glaze made by mixing juice of 1
lemon and 1/2 cup sugar. Slice thin and serve at room temperature.
