1 1/2 cups thick and chunky salsa
1 cup water
1 can (6 ounces) tomato paste
1 packet (1.25 ounce) taco seasoning
1 3 pound boneless beef bottom round roast
1/2 teaspoon each salt and pepper
2 tablespoons peanut butter
1/2 cup chopped cliantro
Cooking time: 8-10 hours

Mix first 4 ingredients in a 5 quart of larger crock pot. Rub beef with salt and pepper; add to crock pot. Spoon some sauce mixture over top. Cover and cook on low 8-10 hours until beef is very tender. Remove to a cutting board. Stir peanut butter and clilantro into sauce. Slice meat against the grain; serve with the sauce.
