Yield: 24 muffins

2 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup vegetable oil
1 cup sugar
1 teaspoon vanilla extract
4 cups tart apples, peeled and chopped
1 cup chopped walnuts
Cooking time: 15-20 minutes

Preheat oven to 350 degrees. Line 24 2 1/2 inch muffin cups with paper.
In small bowl, stir together flour, cinnamon, baking soda and salt; set aside. In large bowl, beat eggs until foamy.
Beat in oil, sugar and vanilla. Stir in flour mixture until blended. Stir in apples and walnuts. Spoon into muffin cups.
Bake at 350 degrees 15-20 minutes or unti toothpick inserted in center comes out clean. Remove from pans. Serve warm
or at room temperature.
