Yield: 3 9 inch waffles

2 eggs
2 cups buttermilk
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup PLUS 2 tablespoons shortening
melted margarine
syrup
Beat eggs; beat in buttermilk flour, baking powder, baking soda, salt and shortening with mixer until smooth.
Pour batter from cup or pitcher onto center of hot waffle iron.
Bake until steaming stops.
Lift off waffle carefully with fork.
Serve with butter and syrup.
