Yield: 6 muffins

1 3/4 cups flour
3/4 cup sugar
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1 medium zucchini, shredded (about 2 cups)
1/3 cup vegetable oil
Cooking time: 25-30 minutes

Preheat oven to 400 degrees. Grease 6 3 inch muffin pan cups.
In large bowl, add flour, sugar, baking soda, salt and cinnamon. In medium bowl with fork, beat eggs slightly. Stir
in shredded zucchini and oil. Stir in egg mixture all at once into flour mixture; just until flour mixture is moistened.
(Don't overmix. Butter should be lumpy) Spoon batter into prepared muffin cups.
Bake 25-30 minutes until toothpick inserted into center comes out6 clean. Remove muffins from pans. Serve warm.
