Applesauce Loaf Cake: Date Added: 21 Jul 2013 Ingredients:

Yield: 1 loaf

1/2 cup shortening
1 1/2 cups sugar
2 eggs, well beaten
1 1/2 cups applesauce, unsweetened
2 1/2 cups cake flour
1/8 teaspoon salt
1 teaspoon baking soda dissolved in 2 tablespoons hot water
1 teaspoon cinnamon
1/2 teaspoon cloves
1 cup chopped seedless raisins
1/2 cup chopped nuts (optional)

Cooking Instructions:

Cooking time: 60 minutes

Preheat oven to 350 degrees.

Grease 9 X 5 loaf pan.

Cream shortening.
Add sugar gradually and continue to beat until fluffy.
Add well-beaten eggs and combine thoroughly.
Sift flour; measure and sift again with salt and spices.
Add 1/3 of the applesauce to the creamed mixture and blend.

Add dry ingredients alternately with remaining applesauce, beating thoroughly after each addition.
Dissolve baking soda in the hot water and add to mixture.
Mix thoroughly.
Chop raisins and nuts on a board and flour lightly.
Fold these into mixture. Pour into a loaf pan.

Bake approximately 1 hour.
