3 eggs
1 cup oil
2 cups sugar
2 teaspoons vanilla
2 cups coarsely shredded zucchini, unpeeled
1 cup crushed pineapple, well drained
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons cinnamon
3/4 teaspoon nutmeg
1 cup raisins
1 cup walnuts, chopped (optional)
Cooking time: 60 minutes

Preheat oven to 350 degrees.
Grease and flour 2 9 X 5 inch loaf pans.
With mixer, beat 3 eggs to blend.
Continue beating.
Add oil, sugar,and vanilla.
Stir in zucchini, crushed pineapple.
Combine flour, baking soda, salt, baking powder, cinnamon, nutmeg, raisins and walnuts.
Stir gently into zucchini mixture, just until blended.
Divide into two loaf pans.
Bake for 1 hour.
Cool in pans for 10 minutes.
