Yield: 12 muffins

1 cup oatmeal
1 cup buttermilk
1 egg
1/2 cup brown sugar, firmly packed
1 cup flour (or 1/2 cup whole wheat and 1/2 cup white flour)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 cup oil
Cooking time: 20 minutes

Preheat oven to 400 degrees.
Grease muffin tins.
Soak oatmeal in buttermilk for 1 hour.
After soaking period, add egg and sugar; beating well.
Add flour , salt ,baking soda and baking powder.
Oil is added last.
Divide into greased muffin tins .
Bake for 15-20 minutes.
(These muffins freeze well.)
